Gluten-free (buckwheat) zucchini muffins were a success! The spiced rum in lieu of vanilla extract and the cinnamon add a brief flash of flavor on the back of the tongue. Delicious and dad approved!!
Two loaves of zucchini bread in the oven, with a dozen bonus gluten-free buckwheat style ones in a cupcake tin on the side. Didn’t have enough vanilla extract but dad had some Kraken spiced rum. It’s an experiment!
